
Chicken Gizzard Tacos
(Otherwise Known as Butthole Bites)
1 pound chicken gizzards
1 cup peeled garlic, pureed
1 tablespoon Korean chili powder, coarse ground
1 tablespoon roasted sesame seeds
4 tablespoons sesame oil
4 tablespoons vegetable oil
salt and pepper to taste
Soak the gizzards for a couple hours in cold water and let sit, then drain, rinse, and dry.
Mix the gizzards with all the other ingredients, then fry in a pan till cooked, should take a few minutes on each side.
Onion mix: mince an onion with a cup of chopped cilantro and squeeze the juice of a lime in, with salt and pepper.
Heat up some corn tortillas and fill the tacos with the gizzards. Garnish with shredded cheddar cheese, Tatatio hot sauce, and the minced-onion mix.
