
Prime home-fed and home-cured Yorkshire ham is something to dream about. It must be served in generous thick rashers, done to a turn, well-browned, dripping with fat and crowned with lots of eggs. Properly cooked, it melts in the mouth and induces a feeling approaching beatitude in the delighted guest. It is a dish for gourmets, but there is only one place to savour it to perfection and that is in its native county; and even then one must have done a hard day’s walking to derive the authentic thrill that it gives. Yorkshire pudding and Yorkshire ham are two of Yorkshire’s best gifts to suffering humanity.
