
In the vastness that is Mexico, fiestas are the heartbeat of tradition – celebrations uncorked to rejuvenate big-city dwellers, villagers and ranchers with good food and rich, long-lasting friendships that reach across the ages. A simple meal at Toucan Taco in Laurel is a lot like being in the thick of one of those feasts. There may not be audible music, but the sound of a mariachi band stirs within.

Inside Toucan Taco, the wood-veneer panel on the walls is original. The drop ceiling remains untouched, water stains and all. The tables are nearly fifty years old, but sturdy. Most importantly, the Mexican gravy-smothered burritos and golden queso on the menu are the same as when the establishment was known as Tippy’s Taco House, a Dallas area-born Tex-Mex franchise dating back to the 1950s.
