
The European brown bear, the American black bear and the white polar bear are all considered edible and good eating. The flesh of the smaller black bear is excellent with something of the flavour of the pig. The almost extinct grizzly bear, while edible, has a coarse and tough meat. The really edible bears are those which feed on vegetables, berries and honey. However, one authority warns that the flesh of a bear killed after its anger has been roused will not be pleasant.
